Tasty Treat Tuesday: Lemon Squares

Lemon Squares
Ingredients:
For crust 
-1/2 pound unsalted butter, room temperature 
-1/2 cup granulated sugar 
-2 cups flour 
-1/8 teaspoon salt

For Filling
-6 eggs, room temperature 
-3 cups sugar 
-2 tablespoons grated lemon zest (4 to 6 lemons) 
-1 cup freshly squeezed lemon juice 
-1 cup flour 
-Powdered sugar for dusting

Directions
1. Preheat oven to 350 degrees. 
2. Start with your crust. Cream together your sugar and your butter (use your paddle attachment on your mixer) until light. 
3. With your mixer on low speed, slowly add your flour and salt mixture to your butter and sugar mixture until just mixed. 
4. Roll the dough in a ball (you can either do this in your mixing bowl or on a floured surface) and put in a 9x13 inch cake pan and spread evenly, about 1/2 inch all around. Chill for 10 minutes. 
5. Put the dough in the oven for 15-20 minutes, or until lightly browned. Let cool. 
6. In a large mixing bowl, combine all ingredients for the filling and whisk until fully mixed. 
7. Pour over your crust and bake for 30-35 minutes, checking every 15 minutes for even cooking. When filling is set, take out of the oven and let cool to room temperature. 
Quick tip: Make SURE you let it cool to room temperature before you attempt to cut them. The filling with fall out and the crust will crumble super easy. 
8. When cool, dust lightly with powdered sugar, cut, and serve!

Let me be honest here. I love these lemon bars. And I usually don't like lemon. This recipe made about 20 lemon squares and I ate maybe 8 of them... in a day. They are the perfect summer dessert. Pair with cherry or strawberry lemonade and a few friends and you've got yourself a party.
